But it was a good weekend!
1.) I completely paid off my car! so thats one less thing I have to worry about on a monthly basis!
---Mind you I just bought the car last February and its paid off now! I am pretty proud of that!--
2.) This was my last weekend at Urgent Care!
3.) I love beer and fireball shots-- (Saturday night consisted of these and a lot of them!)
4.) Justin Timberlake is a Boss! seriously performed for almost 20 minutes at the VMA's and *Nsync reunited and I may have squeeled like a little school girl when they turned around! I am not afraid to admit this!
5.) I have got a recipe for youuuu that I love!
I discovered this recipe when I did a dear friends wedding in Denver a few months back.
I was looking for a more wedding ish recipe that was different than red velvet and carrot cake and blah blah blah. When I saw the name I knew it was a winner!
I thought the sign was a cute touch for guests at the wedding
so they knew what kind they were going to dig into.
It was the Raspberry champagne! It is now a favorite amoung customers and I have made it for weddings, baby showers, bridal showers, and birthdays!
Ingredients
For the Cupcakes
- 2 1/3 cups all-purpose flour
- 1 tablespoon baking powder
- 3/4 teaspoon fine salt
- 1 1/2 cups white sugar
- 1/2 cup canola oil
- 2 eggs
- 1 1/2 cups buttermilk
- 1 teaspoon raspberry extract
- 2 1/2 tablespoons pureed fresh raspberries(strained so theres no seeds)
Sift together the dry ingredients in a bowl. after sifted add to standing mixer with paddle attachement on low speed- slowly start to add the oil until its crumbly- Add the eggs, buttermilk, raspberry extract, and fresh pureed raspberries to the mixer and mix on low until combined. Scrap sides of bowl down then mix on medium for about a minute
Bake at 350* for about 15-18 mins (bake at 325* if using a darker pan)
This recipe makes about 20-24 cupcakes
For the Buttercream
In the bowl of an electric stand mixer with a paddle attachment, whip the butter and raspberries until creamed. Add the powdered sugar, champagne and raspberry extract and mix until the ingredients are evenly incorporated and the frosting is smooth and creamy but pipe-able
This frosting is soooooo good! its such a light flavor and its perfect!
