Shenanigans and a recipe! a GOOOD recipe

The weekend went by incredibly too fast!
But it was a good weekend!

1.) I completely paid off my car! so thats one less thing I have to worry about on a monthly basis!
---Mind you I just bought the car last February and its paid off now! I am pretty proud of that!--

2.) This was my last weekend at Urgent Care!

3.) I love beer and fireball shots-- (Saturday night consisted of these and a lot of them!)

4.) Justin Timberlake is a Boss! seriously performed for almost 20 minutes at the VMA's and *Nsync reunited and I may have squeeled like a little school girl when they turned around! I am not afraid to admit this!

5.) I have got a recipe for youuuu that I love!

I discovered this recipe when I did a dear friends wedding in Denver a few months back.
I was looking for a more wedding ish recipe that was different than red velvet and carrot cake and blah blah blah.  When I saw the name I knew it was a winner!

I thought the sign was a cute touch for guests at the wedding
so they knew what kind they were going to dig into.



It was the Raspberry champagne! It is now a favorite amoung customers and I have made it for weddings, baby showers, bridal showers, and birthdays!




Ingredients

For the Cupcakes
  • 2 1/3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon fine salt
  • 1 1/2 cups white sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1 teaspoon raspberry extract
  • 2 1/2 tablespoons pureed fresh raspberries(strained so theres no seeds)
Sift together the dry ingredients in a bowl. after sifted add to standing mixer with paddle attachement on low speed- slowly start to add the oil until its crumbly- Add the eggs, buttermilk, raspberry extract, and fresh pureed raspberries to the mixer and mix on low until combined. Scrap sides of bowl down then mix on medium for about a minute
Bake at 350* for about 15-18 mins (bake at 325* if using a darker pan)
This recipe makes about 20-24 cupcakes
 
For the Buttercream
 
  • 1 pound unsalted butter, room temperature
  • 6 cups powdered sugar
  • 1/4 cup of a dry champagne(doesn't matter what kind- I used Andre Extra Dry)
  • 2 teaspoons pureed raspberries
  •  1 teaspoon of raspberry extract
  •  
    In the bowl of an electric stand mixer with a paddle attachment, whip the butter and raspberries until creamed. Add the powdered sugar, champagne and raspberry extract and mix until the ingredients are evenly incorporated and the frosting is smooth and creamy but pipe-able
     
    This frosting is soooooo good! its such a light flavor and its perfect!

    Oh Hey! Proof I am not a bum and Big News!

    So since I last posted, It's been a wild ride! I'll give you a little run down in chronological order :)


    In July, the boys and I ventured to Denver with over 100 cupcakes for a wedding-- Well it was an open bar- which lead to drinking heavy amounts of alcohol so we ended up staying and just went back the next day to Nebraska-- it was a fun little impromptu trip :)
    P.S. found my new favorite on this trip with some that I had made for it- Raspberry Champagne Cupcakes- They were fantastic- keep watching I'm going to post the recipe soon :)


     
    Oh then I got pnemonia-- COOOLLL!
     
     
    Then it was Joey's dads birthday and we surprised him with these cuties because thats what he wanted :)
     
    Then a bridal shower which here's the Raspberry Champagne cupcakes again :)
    They made a pretty bouquet
     
     
    Then I drank this whole bottle of wine plus a few other adult beverages-- okay this may have happened on more than one occasion but its a necessary thing for me to have when I have a long night of baking ahead of me :)-- and yes that is a $2 bottle of wine! I am cheap!
     
    Do I need to mention how long my night was? I started baking at 8 PM and I was not done until 5 AM! then had to deliver at 7 am then go to work by 8 AM lets just say it was a LONGGGGG day!
    But I made another cake for Gavin's 3rd birthday then I donated 8 dozen cupcakes to Bath & Bodyworks for a fundraiser they were doing to raise money for cancer research

    I turned 24 and dyed my hair red-- you wanna know why?

    Then there was sweet little Emma Rose's birthday
    She is a dear friends grand daughter and she is adorablleeee!
    I really liked how this one came out :)


     
     
    Since I love beer SOOOO much I was super excited when a girl asked me to make her a beer cake for her dad for his birthday-- Bad news is-- she needed it in 2 days-- SHIT!
    Well i cant say no to anyone because I am an idiot- so I did it
    I literally had no time to do it with prior obligations but I did it anyway
    It didnt turn out how I wanted But it wasnt too bad for only having 3 hours to do everything

    There were the usual orders in between time a couple here and there but nothing really news worthy :)

    My company I work for- SourceGas is moving me 14 hours away to Fayetteville, AR
    I am pretty excited for the move and the new opportunites!
    My boys are moving back to LA the same time I am moving so its pretty good timing!

    Slacker mcslacker pants and churro cupcakes!

    So before I took my extended vacation to Texas for 2 weeks 
    This is what I did on my vacation.. Drank some beers, planned a bachelorette party, and got to spend time with my best friend since 3rd grade and her younger sister! 


    I promised a recipe
    Well I have been a little busy and the site doesn't work at work anymore so I get to do this from my iPad :) 
    Before I left I made some fantabulous cupcakes that are my new faves! 
    I was browsing the net looking for ideas for new flavors when I came across.. Lone and behold.. 
    Churro cupcakes! Ooooo mmmmm gggg! I luuuurrrrvveeee churros! If I could have a churro machine in my room like Louis from the Disney show "even Stevens" I would have so do it!

    Makes between 12-16 cupcakes
    Preheat oven at 350 degrees

    Cupcakes
    • 1 cup  cake flour
    • 1/4 cup graham cracker crumbs (I used cinnamon)
    • 2 teaspoons ground cinnamon
    • 3/4 teaspoon baking powder 
    • 1/4 teaspoon baking soda 
    • 1/4 teaspoon salt 
    • 6 tablespoons (3/4 stick) unsalted butter, room temperature 
    • 3/4 cup granulated white sugar 
    • 1 large egg, room temperature
    • 1 large egg yolk, room temperature 
    • 1 tablespoon vegetable oil 
    • 1 teaspoon good quality, pure vanilla extract 
    • 1/4 cup buttermilk, room temperature
    • 1/2 cup plain Greek yogurt or sour cream whatever you have on hand

    In a small bowl Whisk the flour,  crumbs, cinnamon, baking powder, baking soda, and salt, set aside. In a standing mixer, with a paddle attachment, cream the butter and sugar together, until fluffy. Scrape  sides of the bowl. On low speed add the egg and yolk one at a time until combined. Beat in oil and vanilla until incorporated, scraping down the sides of the bowl.add 1/3 of the flour mixture and then add buttermilk, then alternate to the next 3rd of the mix, add sour cream then add final 3rd of flour mixture. Do not over beat this! In cupcake liners add about 2 tbsp of batter to each liner. Bake for 16-22 minutes or until knife comes out clean
    Cool completely

    Now for the frosting 
    I put the mixer and attachment in freezer for 15-20 mins before making frosting 
    • 8oz cream cheese, keep in fridge until ready to use and don't use low fat
    • 1/2 cup (1 stick) unsalted butter, room temperature
    • 1 teaspoon vanilla extract
    • 2 cups confectioners’ sugar (powdered sugar), sifted
    • 1/4-1/2 teaspoon ground cinnamon
    • 1-2 tbsp whipping cream

    With standing mixer with paddle attachment, beat butter and cream cheese on medium speed until smooth . Add vanilla. Gradually beat in powdered sugar and cinnamon until incorporated. Add your whipping cream then beat on high for 3 minutes until pipeable. If too runny add a tbsp at a time of powdered sugar
    On her recipe she made mini churros to put on top.. Buttttttt ain't nobody got tie for that. :) 
    I sprinkled with a little cinnamon on top


    And that's all she wrote :) 
    I changed a few things from her recipe because I like my cupcakes really moist but they were fantastic!

    The weekend I took on too much

    This last weekend I over did it a little bit. I took on way too much but I am one of those people who can't say no- but everything still came out perfect- just lacking some sleep :)
    Luckily on friday the lady i work with on my second job text me and asked if she could have my hours-- I did not hesitate to say yes to this But I did still have to work sunday 12-5

    Friday Night:
    I did my first fondant cake (2 layer 6 inch vanilla cake with vanilla frosting)



    It turned out really well for as nervous as I was for it
    I didnt get off work until 5:30 so I baked my cakes in the 6 inch pans cooled them
    I was having a rough time with my fondant ripped when I would drape it over the cake--
    Googled the shit out of that!-- come to find out it was the simpliest solution- add shortening-- DUHH!
    so after doing that it all worked perfect  Everything fell into place and I was happy with the outcome

    with 2 dozen cupcakes to go with


     
    2 dozen spiderman cupcakes
    1 dozen carrot with cream cheese frosting
    (these were Logan's favorite)
    When Johanna first asked me to do these for her son
    I could not believe that a four year old wanted carrot cake
    for his birthday! But after testing one-- holy shiz! now I know!
    It was my first time making carrot cake
    and I am hooked now!
     
    One dozen Chocolate with chocolate buttercream
     
     
    (I had forgotten to take a picture but Johanna took a photo for me)
    I really wanted to spend more time on the spiderman ones considering I
    too am a huge fan! I wanted to go into more detail and add more fondant toppings
    I literally had a total of 2 hours to work on these before having to go to work.
    The birthday boy loved them so that is all that matters :)

    The Day of Happy Birthdays!-- Surprises-- (recipe for Peanut Butter Buttercream)

    If any one knows me.. They know I am one who LOVES birthdays!

    I tend to over do a bit but I like to make people feel special on their special day!

    Yesterday I was able to help celebrate 2 birthdays!
    One for a friend/Doctor at my weekend job/awesome lady! She was going to be out
    of town for her husbands birthday but wanted to do something nice and surprise him!
    She asked me if I would be willing to deliver them to his work and surprise him
    before his work meeting on Wednesday morning. I LOOVVEEE surprises!
    so I said duhhh!

    8:15- Stopped at home to grab the cupcakes and finish topping them
    830-840 ish I arrived at his work
    I walk in and the receptionist said he wasnt there yet and he usually
    doesnt come in til closer to 9:00

    Soooo I didnt get to see his reaction to them buttttt the receptionist did put them
    on his desk and they were all going to get to eat them for the meeting
    and throughout the day

    I have been getting so bad about taking photos and I really wish I would have!
    I wrapped up the boxes to look like presents with just ribbon.. I was too scared
    to wrap them up in wrapping paper for fear he was the type that goes crazy when
    opening gifts and just mangle the crap out of the cupcakes

    Second Birthday was for a co worker at my week job! She is the type that never
    forgets anyones birthdays and always gets them a card or does something special!



    So another co worker suggested making her cubicle into a hawaiian theme
    Over our lunches we went and bought some fun stuff to decorate her cubicle with
    But you would not believe how hard it was to find party supplies here!
    We got a towel and put it over her chair so it was like she was laying down
    Put up banners and streamers and balloons
    put fake grass on her desk
    Got her a plastic margarita glass to drink her Hawaiian punch with :)
    Then the main event!
    I found a confetti cannon! I HAD to have it! it was sooo awesommeeeeee!
    It made quite the mess and was extremely loud but it was fun!


    Along side of the decorating and confetti cannon, I also brought along
    her favorite cupcakes-- the Reese's and the Snickers

    I have had a few people ask me for the recipe for the Peanut Butter Buttercream
     and have given it to them but I thought I would share the recipe on here so other
    people could use it and just in case i ever forget it I have a reference :)

    This frosting I use on the reeses peanut buttercup cupcakes

    Peanut Butter Buttercream
    3 sticks of unsalted butter
    1 cup of creamy peanut butter
    5.5 cups of powdered sugar (sifted)
    2 teaspoons of Vanilla
    5 tablespoons of heavy whipping cream

    Cream the butter and peanut butter together until fluffy
    slowly mix in the sugar until combined
    then add in the vanilla until combined
    then add 1 tablespoon at a time of the heavy cream until combined
    then what makes it really light is whipping it in your standing mixer
    on high for 3-5 minutes
    Dont skip the last step!
    This makes enough to pipe 24 cupcakes generously-- plus some
    I always have at least a cup of frosting left over-

    and thats it! I could seriously eat that by the spoonful! It pipes very well
    or if you don't have a piping bag and tips you can just spoon it on and spread it..

    Chocolate Chip Cookie dough filled cupcakes or "Half Baked"

    A few weeks ago I was asked to make 30 Bronco cupcakes
    for an 11 year olds birthday
    and Mom told me just to think of some ideas of what
    11 year olds would like and go with it

    (I completey forgot to take a picture of the denver bronco toppings for the cupcakes)

    I had remembered seeing this recipe on a blog of a recipe something like the one
    I did  a while back
    (I wish I could remember what blog it was so I could give them credit!)
    I ended up kind of making up my own recipe
    My grandma makes the BEST chocolate chip cookies ever!
    So I figured they had to of been even better as a dough!
    I used her top secret recipe- used my small ice cream scoop and formed the
    cookie dough into balls onto parchment paper and put them in the freezer
    Next I made a vanilla cupcake and filled the cupcake liners 2/3 way full of batter
    after the cookie dough was pretty frozen I dropped a ball on top of each cupcake
    Then baked them and topped with a cookie dough buttercream

    It baked over perfect! The only thing I noticed was that the cookie dough in
     the middle seemed to kind of hollow out in the middle or sink to the bottom
    Next time I'll bake them for less time  so it stays full  through the middle
    Joey said these were HIS FAVORITE!

    Cupcake-a-Palooza! 300 cupcakes, 25 dozen, 5 varieties

    This last weekend was the big Cupcake-palooza!
    I could not have been more happy with the outcome of the night

    My mom, Logan, and I began at about 5:30PM

    I am so fortunate to have the resources I do as far as a facility with a commercial kitchen to bake in.
    I baked at The Hampton Inn & Suites-- My best friend is the assistant general manager-- I worked at this business for 5 + years so I know everyone who works there as well

    It was so nice having the extra hands to do the dishes, build boxes, and unwrap reese's and snickers

    We ended up making:
    Twinkie
    Snickers
    Reese's
    Better than Sex
    Red Velvet

    Starting with the chocolate based cupcakes, then the yellow cake, then on to red velvet since I always seen to make the biggest mess with red velvet!

    We were done with all 300 in a matter of 5 hours. Then we cleaned up swept, mopped, everything packed back into the vehicles and were out of that joint by 10:30. Below is what 300 cupcakes look like in boxes stacked 5 boxes high along with Logan modeling :)



    I cannot thank my mom and Logan enough for all the help! They were soooo great! I didn't have to ask for one single thing from them! As soon as a dish went into the sink someone was there doing it and hand drying them.

    I frosted and decorated the cupcakes the next day which didn't take long!
    They were off for delivery at 3:00 PM as asked
    I forgot to take pictures of them individually but the graduates' Mom took photos for me and this was one of the cake table- Not all 300 are shown

    Everyone was in love with them- Says Jana the graduates mom-So they must have been pretty tasty :)
